serves 4ingredients:12 new potatoes3 tablespoons olive oil, divided2 teaspoons fresh or dried thymepinch of salt and pepper4 salmon fillets1 bunch asparagus, trimmed20 cherry tomatoes1 lemon, cut in halfdirections:heat the oven to 375 degrees. line a baking sheet with parchment paper. (depending on the size of your baking sheet and your fillets, you may need to use two.)slice the potatoes about ¼-inch thick and scatter them across the baking sheet. drizzle with 2 tablespoons olive oil and sprinkle with thyme and a pinch of salt and pepper. bake for 15 minutes.remove the pan from the oven. increase the heat to 400 degrees. lay the salmon fillets skin-side down over the potatoes and loosely arrange the asparagus and tomatoes all around. drizzle the remaining oil over the top of everything. bake for another 10 to 15 minutes until the salmon is just cooked through. squeeze lemon juice over the whole pan before serving.— laura keogh and ceri marsh, “the school year survival cookbook” (penguin random house, $24.95)
